I know you should be running a diagonal if you have two assistants. But I don't get two proper ones in my league. Just 2 random guys watching who rarely pay attention.

Because of this is there any advice you can give on positioning as I sometimes feel I get in the way of players and the ball. Much to the players and my own frustration

Keep to the diagonal IMHO. That was the advice from my chiefs. Others will disagree as this has been covered here before.
Run a wider and longer diagonal if you can - or if you have to - if you are struggling with offsides.
If you improvise new positioning you will get confused. If you try to cover every blade you will probably get lost and in the way.
Stick to the diagonal - it is also the best practice - and it becomes more and more instinctive.
