If, in your opinion, it has prevented the attacker from having an obvious goal scoring opportunity then yes, send the defender off, regardless of their age. The laws of the game make no allowances for the age group.

Sometimes use "no need to argue; I'm always right" when a players questioning a decision but only when there's been a bit of banter through the game. Otherwise it could be quite provocative and cause trouble.

If Player 1 picked the ball up but then was tackled by player B then yes it would be an offside offence.

Gaz... if there is a notable pattern occurring I would suggest giving a warning to the offending team captain for the multiple late tackles. If any further fouls of a similar nature occur I would then suggest issuing a caution for unsporting behaviour as opposed to persistent infringement.
